I've tried it with 50% and it just doesn't turn out right.Another top tip is to use good quality flour whether it's wheat or gluten free. I always use Organic when I can.Don't rush. When adding the flour and cocoa powder, fold in slowly until it's all combined.
Melt butter and dark chocolate in a pan over low heat.
Heat oven at 160°C Fan oven.
Chop the white and milk chocolate into little pieces if not already done so.
Sieve flour and cocoa powder in a bowl.
Whisk eggs and sugar in a electric mixer until pale and thick and creamy.
Pour in cooled chocolate mixture in the eggy mousse and slowly mix together.
Add the flour and cocoa powder and fold in slowly until everything is blended in.
Add the chopped chocolate.
Pour evenly into baking tins and bake for 26 minutes
